Cottage Cheese Cauliflower Tots




These easy-to-make Cottage Cheese Cauliflower Tots are a fun and delicious snack or appetizer that you can enjoy without any guilt. Best of all, they’re gluten-free, low-carb, keto-friendly, and baked instead of fried.


Ingredients

  • 12 ounces fresh or frozen uncooked cauliflower rice thawed

  • 1 cup cottage cheese

  • ½ teaspoon Kosher salt

  • ¼ teaspoon dried oregano

  • ¼ teaspoon garlic powder

  • Nonstick cooking spray


Instructions

  • Preheat the oven to 425° F (preferably convection otherwise 450° F in a conventional oven). Line a sheet pan with parchment paper or a silicon baking mat.

  • Heat a large nonstick skillet over medium-high (no need for cooking spray). Add the cauliflower rice and cook until almost tender, 3 to 5 minutes. Spread the cooked cauliflower out onto layers of paper towels or a clean kitchen towel to absorb excess moisture. Let cool completely.

  • Meanwhile, in a food processor or a blender, puree the cottage cheese until smooth.

  • In a medium bowl, stir together the cooked cauliflower, whipped cottage cheese, salt, oregano, and garlic powder.

  • For each tot, scoop out the dough with a small cookie dough scoop or rounded tablespoon of the cauliflower mixture into a tot shape and place onto the prepared baking sheet. Coat tots with cooking spray.

  • Bake until browned, 15 to 20 minutes. Reshape tots as needed after they have come out of the oven.


***Can be made in the air fryer at 400F for 10-15 minutes.
