These easy-to-make Cottage Cheese Cauliflower Tots are a fun and delicious snack or appetizer that you can enjoy without any guilt. Best of all, they’re gluten-free, low-carb, keto-friendly, and baked instead of fried.
Ingredients
12 ounces fresh or frozen uncooked cauliflower rice thawed
1 cup cottage cheese
½ teaspoon Kosher salt
¼ teaspoon dried oregano
¼ teaspoon garlic powder
Nonstick cooking spray
Instructions
Preheat the oven to 425° F (preferably convection otherwise 450° F in a conventional oven). Line a sheet pan with parchment paper or a silicon baking mat.
Heat a large nonstick skillet over medium-high (no need for cooking spray). Add the cauliflower rice and cook until almost tender, 3 to 5 minutes. Spread the cooked cauliflower out onto layers of paper towels or a clean kitchen towel to absorb excess moisture. Let cool completely.
Meanwhile, in a food processor or a blender, puree the cottage cheese until smooth.
In a medium bowl, stir together the cooked cauliflower, whipped cottage cheese, salt, oregano, and garlic powder.
For each tot, scoop out the dough with a small cookie dough scoop or rounded tablespoon of the cauliflower mixture into a tot shape and place onto the prepared baking sheet. Coat tots with cooking spray.
Bake until browned, 15 to 20 minutes. Reshape tots as needed after they have come out of the oven.
***Can be made in the air fryer at 400F for 10-15 minutes.
