High Protein Chia Pudding Recipe- great for breakfast or an anytime snack!

This is my new go to breakfast. I love it because its high in protein and fiber, dairy and wheat free and filled with heart healthy fats. It's filling and creamy- I add in fresh berries for some added antioxidants. It takes a few minutes to make and lasts in the fridge up to 4 days. It's also great to bring into the office or eat on the road.

Ingredients:

  • 2 cups unsweetened almond milk- or milk of choice

  • 6 tablespoons chia seeds

  • 1 heaping scoop of vanilla protein powder- SunWarrior is good.

  • 1 tablespoon nut butter or PB Pure Powder

  • dash of cinnamon

  • berries or fruit of choice

Directions:

  1. Add all the ingredients into a pyrex.

  2. Mix well and cover

  3. Refrigerate for at least 2 hours

  4. Mix well before eating
