Tomato-Avocado Dip (feta optional)
Ingredients:
1 cup chopped tomato
1 1/2 tsp.fresh cilantro (can substitute with parsley)
1/4 cup crumbled feta (optional)
1 Tablespoon fresh lime juice
1/4 tsp. salt
1/4 tsp. ground cumin
1 ripe peeled avocado- coarsely mashed
1 clove garlic, minced
Directions:
Combine tomato, cilantro, lime juice, salt, cumin, avocado, feta and garlic in a medium bowl.
Serve immediately or cover tightly with saran wrap and refrigerate until serving.
